01 / THE ORIGIN

PERUVIAN ROOTS · THE FIRST SYSTEM

Before mise en place,
there was code.

Born and raised in Peru, Eric spent his early adulthood programming—writing code, navigating business logic and learning how structure can turn complexity into something useful and repeatable.

Food was always the passion underneath it. At 22, his systems mind and love for cooking converged, and he committed fully to becoming a chef. He arrived in the United States at 24 already trained—ready to prove what consistency, hard work and faith in the process could make possible.

Service revealed something larger than food: people, experience, love and the value of time shared. From Marriott Marco Island to Miami's leading Peruvian kitchens, private homes and major hospitality partnerships, each chapter moved the work closer to helping people feel better—whether for one evening or every day.

Thirty years of martial arts kept him focused. Coaching on the mat and training teams in the kitchen taught patience. His children taught him that what we do with our time together is what truly matters. Earning his black belt opened his mind to sharing everything he had learned.

Food was never the final outcome. It was the medium—a path for service, structure, connection and becoming more fully himself.

01

Peru

Flavor, family and the first understanding that food could carry memory.

02

Programming

Code and business logic trained Eric to make complexity clear, useful and repeatable.

03

The kitchen

At 22, passion and a systems mind converged. He chose service and became a chef full time.

04

The United States

He arrived at 24 already a chef—first Marriott Marco Island, then leading Peruvian kitchens in Miami.

05

Entrepreneurship

Private dining and catering became Healthy Gourmet Miami, then The Healthy Kitchen: service for a night, or structure for everyday life.

06

ChefJitsu

Thirty years of martial arts, a black belt, fatherhood, teaching and ChefOS brought every chapter into one purpose—his ikigai.

THE BLACK BELT

The moment is not the mastery.

It is evidence of the years that came before it.

DIFFERENT CRAFT

Same discipline.

Everything has its place. Everything has its moment. Precision is not doing more—it is knowing exactly what matters, and when.

WHY CHEFJITSU

Every chapter taught the next.
ChefJitsu brought them together.

Peru gave Eric flavor and memory. Programming gave him structure. Professional kitchens taught resilience and a love for service. Martial arts taught discipline, patience, timing and control.

Teaching teams and coaching martial arts taught him how to guide people. Fatherhood taught him that presence is the point. ChefJitsu is his ikigai: the place where what he loves, what he knows, what he can teach and how he can serve become one.

02 / THE CODE

THE CHEFJITSU CODE

Principles for the kitchen,
the mat and life.

01

Intention

Every movement has purpose. Every ingredient has its place.
02

Control

Use only what serves the outcome. Less can carry more.
03

Timing

The right action matters most at the right moment.
04

Discipline

Return to the standard until excellence becomes instinct.
05

Adaptability

Read what is in front of you. Adjust without losing direction.
06

Service

Technique matters because of how it makes people feel.
07

Patience

Progress is built through teaching, listening and repetition.
08

Presence

How we spend our time together is what remains.

Master the pieces. Control what matters. Make excellence repeatable—and stay present for the people it serves.

THE CONSTANT

A beautiful dinner can change your day.

Structure can change your life.

The transformation is rarely one extraordinary meal, workout or decision. It is a system that makes the right choice easier—and the consistency to return to it.

03 / THE EVOLUTION

CHEFOS

First, a better way
to work with Eric.

ChefOS began as the software-first personal-chef experience: a platform for families to work directly with Chef Eric, preserve preferences, connect goals to menus and make great care more consistent between visits.

Then the vision grew. ChefOS evolved into an operating system for other chefs—helping talented professionals automate the work behind the food, build independent personal-chef businesses and serve more families without losing judgment or care.

Not software that replaces the chef. A system that helps great chefs go further.
